Preheat oven to 350°F.
In a large skillet, cook ground beef and chopped onion over medium heat until browned and tender. Drain excess fat.
Stir in taco seasoning, salt, and pepper. Cook 2–3 more minutes.
In a bowl, mix sour cream and cream of mushroom soup until smooth.
Layer half of the cooked egg noodles in a greased 9x13 inch baking dish.
Spread half the sour cream mixture over noodles, then layer half of the beef mixture.
Repeat with remaining noodles, sauce, and beef. Top with shredded cheddar cheese.
Bake for 25–30 minutes until bubbly and golden on top.
Let cool slightly, garnish with parsley if desired, and serve warm.
Notes
Use Greek yogurt instead of sour cream for a lighter version. Add veggies like bell peppers or corn for extra nutrition. Leftovers freeze beautifully!
