Peel your onions and trim off the top but keep the root intact.
Place onion cut-side down. Make 16 cuts around from top down, about 0.5 inch from root.
Flip over and gently separate layers to bloom.
In a large bowl, combine flour, paprika, cayenne, oregano, cumin, salt, and black pepper.
In another bowl, beat eggs and mix in milk until smooth.
Dredge the onion in the flour mixture, coating each petal evenly.
Dip onion in egg wash, ensuring full coverage.
Return onion to flour mixture for a second coating.
Heat oil to 375°F in a deep fryer or pot. Carefully lower onion, root side down, into oil.
Fry for about 10 minutes or until golden brown and crispy.
Remove from oil using slotted spoon and drain on paper towels.
Cool for a few minutes before serving. Enjoy!
Notes
Store leftovers in airtight container. Reheat in oven for crispiness. Freezing is fine if wrapped well; avoid microwave to preserve texture.
