  • 1 Green cabbage 2 pound head, cut into 1 inch thick slices
  • 1.5 tablespoons Olive oil
  • 2 to 3 Garlic cloves smashed
  • Kosher salt to taste
  • Fresh ground black pepper to taste
  • Spray olive oil or non-stick cooking spray to coat the baking sheet

  • Preheat the oven to 400°F and prepare a baking sheet with non-stick spray or parchment paper.
  • Slice the cabbage into 1 inch thick steaks, keeping the core intact so they hold together.
  • Rub both sides of cabbage steaks with the smashed garlic cloves.
  • Use a pastry brush to spread olive oil on both sides of the cabbage steaks.
  • Generously season both sides with kosher salt and freshly ground black pepper.
  • Roast for 30 minutes, then flip and roast for another 30 minutes until edges are brown and crispy. Serve hot.

Notes

Use thicker slices to prevent cabbage steaks from falling apart when cooking. Store leftovers in an airtight container for up to 3 days.
