  • 0.5 cup Unsalted butter melted
  • 1 Large egg
  • 0.5 cup Light brown sugar packed
  • 1 teaspoon Vanilla extract
  • 1 ¼ cups All-purpose flour
  • 0.25 teaspoon Salt or to taste
  • 0.75 cup Semi-sweet chocolate chips for sprinkling
  • 1.5 cups Sweetened shredded coconut loose in measuring cup
  • 9 oz Sweetened condensed milk two-thirds of one 14-ounce can
  • 4 to 5 oz Caramel sauce homemade or store-bought
  • 0.75 cup Semi-sweet chocolate chips melted for drizzling

  • Preheat oven to 350°F. Spray a 9-inch pie dish thoroughly with cooking spray and set aside.
  • In a large bowl, combine melted butter, egg, brown sugar, and vanilla. Whisk until smooth.
  • Add flour and salt, and stir until just combined; don't overmix.
  • Fold in chocolate chips, shredded coconut, and sweetened condensed milk until evenly incorporated.
  • Pour batter into pie dish and smooth the surface. Drizzle caramel sauce over top.
  • Bake for 25 to 30 minutes until edges are golden and center is set but soft. Let cool completely on a wire rack.
  • Melt remaining chocolate chips and drizzle thick parallel lines over cooled pie. Cool for at least 4 hours before slicing and serving.

Notes

For a shortcut, use store-bought caramel sauce. For best results, cool pie completely before slicing. Freeze leftovers individually wrapped for easy grab-and-go desserts later!
