Ingredients
  

  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • ½ cup honey or maple syrup Can use either sweetener.
  • 1 cup canned pumpkin puree
  • ¼ cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup chopped nuts or chocolate chips (optional) Optional ingredients for added texture.

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease or line the loaf pan with parchment paper.
  • In a mixing bowl, combine the whole wheat flour, rolled oats, baking soda, baking powder, cinnamon, nutmeg, and salt. Whisk these dry ingredients together until well blended.
  • In a separate bowl, whisk together the honey (or maple syrup), pumpkin puree, applesauce, eggs, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredient bowl and mix gently until just combined. Be careful not to overmix.
  • If using, fold in the chopped nuts or chocolate chips.
  • Transfer the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake in the preheated oven for 60 minutes or until a toothpick inserted in the center comes out clean.
  • Once baked, remove the bread from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store the pumpkin bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
You can substitute the whole wheat flour with almond or coconut flour for a gluten-free option, adjusting the liquid ingredients accordingly.
This bread can be served plain or topped with a spread of your choice, such as nut butter or cream cheese for added flavor.
