Preheat your oven to 350°F (175°C) and grease or line the loaf pan with parchment paper.
In a mixing bowl, combine the whole wheat flour, rolled oats, baking soda, baking powder, cinnamon, nutmeg, and salt. Whisk these dry ingredients together until well blended.
In a separate bowl, whisk together the honey (or maple syrup), pumpkin puree, applesauce, eggs, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredient bowl and mix gently until just combined. Be careful not to overmix.
If using, fold in the chopped nuts or chocolate chips.
Transfer the batter into the prepared loaf pan and smooth the top with a spatula.
Bake in the preheated oven for 60 minutes or until a toothpick inserted in the center comes out clean.
Once baked, remove the bread from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
