Ingredients
  

  • 1 cup pumpkin puree Use unsweetened for best flavor.
  • 1 cup rolled oats
  • ½ cup almond butter Can substitute with peanut butter.
  • ¼ cup honey Can substitute with maple syrup.
  • ½ teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice Can substitute with cinnamon.
  • ¼ teaspoon salt
  • ½ cup chopped nuts Such as walnuts or pecans.
  • ¼ cup mini chocolate chips Optional ingredient.

Instructions
 

  • In a mixing bowl, combine the pumpkin puree, almond butter, honey, and vanilla extract. Mix until well combined.
  • Add the rolled oats, pumpkin pie spice, and salt to the mixture. Stir until the dry ingredients are fully incorporated.
  • Fold in the chopped nuts and mini chocolate chips, if using.
  • Using your hands or a spoon, form the mixture into small balls, about 1 inch in diameter.
  • Place the energy balls on a baking sheet or plate lined with parchment paper.
  • Refrigerate for at least 30 minutes to help them firm up (optional but recommended).
  • Store in an airtight container in the refrigerator for up to one week.

Notes

Feel free to add variations by including dried fruit or seeds.
Make sure to use unsweetened pumpkin puree for the best flavor.
These energy balls can also be frozen for longer storage.
