Ingredients
  

  • 1 cup rolled oats
  • 1 cup unsweetened almond milk or any milk of choice
  • ½ cup pumpkin puree canned or fresh
  • 2 tablespoons maple syrup or honey
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • a pinch salt

Instructions
 

  • In a mixing bowl, combine the rolled oats, almond milk, pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and a pinch of salt.
  • Stir the mixture well until all ingredients are thoroughly combined.
  • Divide the mixture equally between two airtight containers or jars.
  • Cover the containers and refrigerate overnight (or for at least 4 hours) to allow the oats to soften and absorb the liquid.
  • In the morning, give the oats a good stir. If desired, add a splash more milk to loosen the consistency.
  • Top with your favorite optional toppings like nuts, seeds, or more pumpkin pie spice.

Notes

For added creaminess, you can mix in a spoonful of yogurt before eating.
