Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) pumpkin puree
  • 1 can (14 oz) diced tomatoes, with juice
  • 2 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • to taste salt
  • to taste pepper
  • ½ cup heavy cream optional
  • 4 slices Swiss cheese
  • 4 slices bread your choice
  • 2 tablespoons butter

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  • Add the pumpkin puree, diced tomatoes (with juice), vegetable broth, ground cumin, and dried thyme to the pot. Stir to combine, then bring to a simmer. Season with salt and pepper to taste. Let it simmer for about 15-20 minutes.
  • While the soup simmers, prepare the Grilled Swiss Cheese Sticks. Butter one side of each slice of bread.
  • Place two slices of bread butter-side down in a grill pan or skillet. Top with two slices of Swiss cheese and then cover with the other slices of bread, butter-side up. Grill on medium heat for 3-5 minutes on each side, or until the bread is golden brown and the cheese is melted. Remove from the pan and cut into sticks.
  • Once the soup is done simmering, blend it using a blender or immersion blender until smooth. If desired, stir in the heavy cream for a richer texture and adjust seasoning if necessary.
  • Serve the pumpkin tomato soup hot in bowls, paired with the grilled Swiss cheese sticks.

Notes

Feel free to add spices or herbs to the soup according to your taste.
You can substitute the Swiss cheese with any cheese of your preference.
