- 1 lb chicken breast, diced
- 2 cups broccoli florets
- 1 each red bell pepper, sliced
- 1 cup snap peas
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon ginger, minced
- ΒΌ cup coconut aminos
- 1 tablespoon sesame oil
- to taste salt and pepper
- 2 each green onions, sliced for garnish
Heat the olive oil in a large skillet or wok over medium-high heat.
Add the diced chicken breast to the skillet. Season with salt and pepper. Cook for about 5β7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.
Add the minced garlic and ginger to the skillet, and cook for an additional 1β2 minutes until fragrant.
Add the broccoli florets, sliced red bell pepper, and snap peas to the skillet. Stir-fry the vegetables for about 5β7 minutes until they are tender-crisp.
Pour in the coconut aminos and sesame oil, stirring well to combine all the ingredients. Cook for another 2 minutes to allow the flavors to meld.
