- 1 package cream cheese, softened 8 oz package
- ⅓ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
- 1 package puff pastry, thawed 1 lb package
- 1 egg for egg wash
- 1 tablespoon milk for egg wash
- to taste additional powdered sugar for dusting optional
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and well combined.
On a floured surface, roll out the puff pastry to about ⅛ inch thick. Cut the pastry into 3-inch squares.
Place about a tablespoon of the cream cheese mixture in the center of each square. Top with 2-3 fresh raspberries.
Fold the corners of the pastry over the filling to form a pocket, pinching the edges to seal tightly.
In a small bowl, beat the egg with milk to make an egg wash. Brush the tops of the pastry bites with the egg wash for a golden finish.
Place the bites onto the prepared baking sheet and bake for 20 minutes or until they are golden brown and puffed up.
Remove from the oven and allow to cool slightly. Dust with additional powdered sugar if desired before serving.
You can substitute raspberries with other berries like blackberries or strawberries if preferred.
