  • 2 cups pepper jack cheese shredded
  • 3 jalapenos seeds removed, finely diced
  • 1 cup all-purpose flour
  • 2 eggs
  • ¼ cup milk
  • 1 ½ cups fine breadcrumbs
  • ½ teaspoon cayenne pepper
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • vegetable oil for frying

  • Mix shredded pepper jack and diced jalapenos in a big bowl. Form into 1-inch balls.
  • Place cheese balls on a baking sheet and freeze for 30 minutes to firm up.
  • Prepare three bowls: one with flour, one with beaten eggs and milk, one with breadcrumbs mixed with cayenne, paprika, garlic powder, and salt.
  • Roll each chilled ball in flour, dip in egg mix, and coat with seasoned breadcrumbs. Press coating on firmly.
  • Heat oil in pressure cooker or deep fryer to 350°F. Fry bites in batches for 2-3 minutes until golden and crispy. Drain on paper towel. Serve hot.

Notes

Freeze cheese balls before frying to prevent them from falling apart. Don’t overcrowd the pot when frying. If reheating, do so in the oven for best crispiness. For a milder flavor, remove jalapeno seeds; for more heat, leave some in.
