  • 4 tablespoons unsalted butter for browned butter
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • 1 pinch ground nutmeg
  • 2 slices Texas toast or brioche thick slices
  • 2 tablespoons unsalted butter for toasting bread
  • 2 tablespoons cinnamon sugar or more as needed
  • 4 pears halved and cored, ripe but firm
  • 4 ounces mascarpone for serving

  • Preheat your oven to 400°F.
  • Melt 4 tablespoons butter in a small saucepan over medium heat until browned and nutty, about 3–5 minutes.
  • Remove from heat and stir in honey, vanilla, cinnamon, and nutmeg. Set aside.
  • Place pear halves cut side up in baking dish and spoon spiced browned butter sauce over them liberally.
  • Roast pears for 25–30 minutes, basting occasionally with juices for caramelization.
  • Meanwhile, melt 2 tablespoons butter in a skillet and toast bread slices 2 minutes per side until golden.
  • Sprinkle warm toast with cinnamon sugar and let cool.
  • To serve, place toast on plates, top with roasted pears, add a dollop of mascarpone, and drizzle with extra browned butter.

Notes

Store leftover roasted pears in the fridge up to 3 days. Re-toast bread before serving for crunch. Leftover browned butter can be refrigerated and reused in other recipes.
