Ingredients
  

  • 2 cups fresh spinach, chopped
  • 1 cup roasted red peppers, diced
  • 1 cup mozzarella cheese, shredded
  • ½ cup ricotta cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • ½ teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes optional

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine the chopped spinach, diced roasted red peppers, mozzarella cheese, ricotta cheese, Parmesan cheese, garlic powder, salt, black pepper, olive oil, oregano, and crushed red pepper flakes. Mix well until all ingredients are incorporated.
  • Transfer the mixture into a greased baking dish, spreading it evenly.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and slightly golden on top.
  • Once done, remove from the oven and let it cool for a few minutes before serving.
  • Optional: Serve with a side of pasta or crusty bread for a more filling meal.

Notes

You can substitute fresh spinach with frozen spinach, just ensure to thaw and drain excess water.
This dish can be served as is, or with a side of pasta or crusty bread for a more filling meal.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
