Preheat oven to 300°F. Line an 8-inch square pan with parchment paper.
Stir melted butter, granulated sugar, vanilla, and salt in a bowl. Mix in flour. Press into pan and bake 15 minutes.
While crust bakes, toss sliced apples with flour, sugar, cinnamon and nutmeg.
Make streusel by mixing flour, brown sugar, oats and cinnamon. Cut in butter until crumbly.
Layer apples over baked crust. Sprinkle with streusel. Bake 30–35 minutes until golden.
Cool completely. Drizzle caramel on top. Slice into squares and serve or store.
Notes
Use a mandoline slicer to quickly prep evenly sliced apples. Store leftovers in an airtight container.
