  • 1 10-ounce bag Tostitos Scoops tortilla chips
  • 1 8-ounce block cream cheese softened
  • 8 ounces shredded mozzarella cheese
  • 1 large egg
  • 1 15-ounce can sweet corn drained
  • 1 4-ounce can mild or medium green chiles
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated parmesan cheese for topping

  • Preheat your oven to 375°F.
  • In a large bowl, mash together cream cheese and mozzarella. Add egg, corn, green chiles, garlic powder, salt, and black pepper. Stir until combined.
  • Line a large baking sheet with parchment paper.
  • Arrange the Tostitos Scoops on the tray and spoon about a tablespoon of mixture into each chip.
  • Sprinkle grated parmesan cheese on top of each bite.
  • Bake for 20–25 minutes until golden and bubbly.
  • Let cool for 5 minutes and serve warm.

Notes

To make it gluten-free, just use gluten-free tortilla scoops. Double-check your canned ingredients for labeling too!
