Preheat your oven to 375°F.
In a large bowl, mash together cream cheese and mozzarella. Add egg, corn, green chiles, garlic powder, salt, and black pepper. Stir until combined.
Line a large baking sheet with parchment paper.
Arrange the Tostitos Scoops on the tray and spoon about a tablespoon of mixture into each chip.
Sprinkle grated parmesan cheese on top of each bite.
Bake for 20–25 minutes until golden and bubbly.
Let cool for 5 minutes and serve warm.
Notes
To make it gluten-free, just use gluten-free tortilla scoops. Double-check your canned ingredients for labeling too!
