Equipment

  • 1 large skillet or wok
  • 1 rice cooker or pot for cooking rice
  • 1 mixing bowl
  • 1 whisk or fork
  • 1 cutting board

Ingredients
  

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups cooked white or brown rice
  • 1 cup broccoli florets
  • 1 cup bell pepper, sliced (any color)
  • 1 cup snap peas, trimmed
  • 1 tablespoon vegetable oil
  • 2 tablespoons sesame oil
  • 4 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 teaspoons cornstarch, mixed with 2 tablespoons of water
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced (or 1 teaspoon ground ginger)
  • sesame seeds for garnish
  • green onions, sliced for garnish (optional)

Instructions
 

  • Cook the rice according to the package instructions and set it aside.
  • In a large skillet or wok, heat the vegetable oil over medium-high heat.
  • Add the chicken pieces to the skillet and cook for about 5-7 minutes, or until browned and cooked through, stirring occasionally.
  • Add the minced garlic and ginger to the chicken and cook for an additional minute until fragrant.
  • Add the broccoli, bell pepper, and snap peas to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  • In a mixing bowl, combine the soy sauce, honey, sesame oil, and cornstarch mixture. Stir well.
  • Pour the sauce mixture over the chicken and vegetables in the skillet. Cook for an additional 2-3 minutes, stirring constantly, until the sauce thickens and coats the chicken and vegetables.
  • To serve, place a scoop of rice in each bowl and top with the sesame chicken and vegetable stir-fry.
  • Garnish with sesame seeds and sliced green onions, if desired.

Notes

You can customize this recipe by adding other vegetables such as carrots, zucchini, or mushrooms as per your preference.
For an extra kick, add red pepper flakes or a dash of sriracha to the sauce.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
