Ingredients
  

  • 4 fillets salmon About 6 ounces each.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups broccoli florets
  • 1 cup diced bell peppers Any color.
  • 1 cup cherry tomatoes
  • 1 lemon sliced
  • to taste fresh parsley For garnish (optional).

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Line the sheet pan with parchment paper for easy cleaning.
  • In a mixing bowl, combine the olive oil, garlic powder, paprika, salt, and black pepper. Mix well.
  • Place the salmon fillets on one side of the sheet pan. Brush the fillets with the oil mixture evenly.
  • On the other side of the pan, spread the broccoli, bell peppers, and cherry tomatoes. Drizzle with any remaining oil mixture and toss to coat.
  • Arrange the lemon slices on top of the salmon and scatter any leftover slices among the vegetables.
  • Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork and the vegetables are tender.
  • Remove from the oven, and garnish with fresh parsley if desired. Serve immediately.

Notes

Feel free to swap in your favorite vegetables like asparagus or zucchini.
To add a little heat, consider sprinkling some red pepper flakes on top before baking.
This dish works well as leftovers; simply reheat in the oven or microwave.
