Equipment

  • 1 mixing bowl
  • 1 cutting board
  • 1 measuring cups and spoons
  • 1 aluminum foil (optional)

Ingredients
  

  • 1 pound ground beef (or ground turkey)
  • 1 medium onion, diced
  • 1 bell pepper, diced any color
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 packet taco seasoning about 1 oz
  • 8 small tortillas (corn or flour)
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, diced
  • Fresh cilantro, for garnish
  • Sour cream, for serving optional
  • Lime wedges, for serving optional

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the ground beef (or turkey), diced onion, diced bell pepper, drained black beans, and taco seasoning. Mix until evenly coated.
  • Spread the mixture evenly onto a large baking sheet.
  • Bake in the preheated oven for 15 minutes, or until the meat is cooked through and the vegetables are tender.
  • Remove the baking sheet from the oven and carefully layer the tortillas on top of the mixture.
  • Sprinkle the shredded cheese over the tortillas and return the baking sheet to the oven for an additional 5 minutes or until the cheese is melted and bubbly.
  • Once done, remove from oven and top with halved cherry tomatoes, diced avocado, and fresh cilantro.
  • Serve with sour cream and lime wedges on the side for added flavor.

Notes

Feel free to customize your toppings based on your preferences, such as adding jalapeños, olives, or corn.
For a vegetarian version, substitute the ground meat with additional beans or roasted vegetables.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave.
