Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 medium celery sticks, diced
  • 1 pound ground beef or lamb
  • 4 cups beef broth
  • 2 cups frozen peas
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper
  • 3 cups mashed potatoes Prepared from about 2 pounds of potatoes.

Instructions
 

  • Heat the olive oil in a large pot or Dutch oven over medium heat.
  • Add the diced onion and sauté for 3-4 minutes until translucent.
  • Stir in the minced garlic, diced carrots, and celery. Cook for an additional 5 minutes until the vegetables start to soften.
  • Add the ground beef or lamb to the pot. Cook, breaking it up with a spoon, until browned (about 5-7 minutes).
  • Pour in the beef broth and bring the mixture to a boil.
  • Stir in the frozen peas, tomato paste, Worcestershire sauce, thyme, and rosemary. Reduce the heat and let it simmer for 15 minutes.
  • Season the soup with salt and pepper to taste.
  • To serve, ladle the soup into bowls and top each serving with a generous scoop of mashed potatoes.

Notes

You can prepare the mashed potatoes ahead of time or use store-bought ones for convenience.
This soup is versatile; feel free to add other vegetables such as corn or green beans based on your preference.
If you want to make it richer, consider adding a splash of heavy cream just before serving.
