- 1 pound shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- ½ cup red onion, finely chopped
- 1 cup cucumber, diced
- ¼ cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon cayenne pepper (optional)
In a medium skillet, heat the olive oil over medium heat.
Add the shrimp to the skillet, seasoning them with salt, black pepper, and cayenne pepper if using. Cook for 3-5 minutes until the shrimp turn pink and are cooked through. Remove from heat and let cool.
In a large mixing bowl, combine the diced avocados, cherry tomatoes, red onion, cucumber, and cilantro.
In a small bowl, whisk together the lime juice and a pinch of salt.
Once the shrimp are cool, add them to the mixing bowl with the vegetables. Drizzle the lime juice dressing over the salad and toss gently to combine, being careful not to mash the avocado.
