  • 2 cups fresh pineapple diced
  • 2 jalapeños seeded and minced
  • 1 small red onion finely chopped
  • 2 cloves garlic minced
  • ½ cup apple cider vinegar
  • ½ cup brown sugar
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ½ teaspoon salt
  • 1 tablespoon olive oil

  • Heat your olive oil in the pressure cooker on sauté mode until warm but not smoking.
  • Add your chopped onion and minced garlic - sauté 3 minutes until translucent and smelling dang good.
  • Throw in the jalapeños now and cook for 2 more minutes, stirring so they get friendly with onion and garlic.
  • Add diced pineapple, brown sugar, apple cider vinegar, cinnamon, ginger, and salt to the pot. Stir until mixed evenly.
  • Lock the lid on tight and ensure your sealing ring is in place before switching to high pressure.
  • Let the sauce pressure build for 10 minutes. Use natural release to thicken and deepen the flavor.
  • Once pressure is fully released, open the lid carefully. Stir and serve warm or chill for later.

Notes

This chutney stores well in the fridge or freezer. Try it over meats, in dips, or stirred into yogurt!
