Equipment

  • 1 slow cooker at least 4 quarts
  • 1 measuring cups and spoons
  • 1 cutting board
  • 1 large spoon for mixing
  • 2 fork for shredding chicken

Ingredients
  

  • 2 pounds boneless, skinless chicken breasts
  • 1 15 oz can black beans rinsed and drained
  • 1 15 oz can corn drained
  • 1 14.5 oz can diced tomatoes with juice
  • 1 8 oz can tomato sauce
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional for heat
  • 6 large flour tortillas
  • 1.5 cups shredded cheese cheddar or Mexican blend
  • to taste optional toppings sour cream, avocado, salsa, cilantro, lime wedges

Instructions
 

  • Place the boneless, skinless chicken breasts at the bottom of the slow cooker.
  • In a mixing bowl, combine the black beans, corn, diced tomatoes (with their juice), tomato sauce, chopped onion, minced garlic, chili powder, cumin, salt, black pepper, and cayenne pepper (if using). Stir to combine thoroughly.
  • Pour the bean and tomato mixture over the chicken in the slow cooker, ensuring the chicken is well covered with the mixture.
  • Cover the slow cooker and cook on low for 6 hours, or until the chicken is fully cooked and tender.
  • Once cooked, carefully remove the chicken from the slow cooker and shred it using two forks.
  • Return the shredded chicken to the slow cooker and stir to combine with the remaining mixture.
  • To serve, spoon the chicken mixture onto a large flour tortilla, sprinkle with shredded cheese, and fold it up like a burrito.
  • Optionally, serve with your favorite toppings like sour cream, avocado, salsa, cilantro, and lime wedges.

Notes

You can customize the spices based on your preference. Add more chili powder or cayenne for extra heat.
For a vegetarian version, you can use additional beans or lentils and skip the chicken.
These burritos freeze well. Just wrap them tightly in foil and store them in the freezer for a meal later on.
