  • 1-2 tablespoon olive oil
  • 1 yellow onion diced
  • ½ lb. ground beef 80/20
  • 7 slices bacon cooked and crumbled
  • 8 oz cream cheese softened
  • ¾ cup shredded Monterey Jack cheese
  • ¾ cup shredded cheddar cheese
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • kosher salt to taste
  • black pepper to taste
  • diced dill pickles for garnish

  • Heat olive oil in a skillet over medium heat. Add the diced onions and sauté until soft and fragrant, about 5 minutes.
  • Add ground beef to the skillet and cook until browned. Season with salt and pepper and drain excess grease.
  • Cook bacon in a separate skillet until crispy, then crumble once cooled.
  • In a slow cooker, add cream cheese. Stir in the cooked beef and onions, followed by bacon, Monterey Jack, cheddar, Worcestershire sauce, and garlic powder. Mix well.
  • Cover and cook on LOW for 2-3 hours or until fully melted and bubbly, stirring occasionally.
  • Once hot and combined, top with diced dill pickles and minced parsley. Serve warm with chips or dippers of choice.

Notes

Top with minced parsley if desired. Store leftovers in an airtight container in the fridge up to 4 days. Reheat with a splash of broth for creaminess.
