Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 to 2 pounds.
  • ½ cup honey
  • ¼ cup soy sauce Low sodium preferred.
  • 5 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon ground ginger
  • 1 teaspoon sesame oil Optional.
  • salt and pepper To taste.
  • green onions, sliced For garnish.
  • sesame seeds For garnish, optional.

Instructions
 

  • In a mixing bowl, combine the honey, soy sauce, minced garlic, rice vinegar, ground ginger, and sesame oil. Whisk until well blended.
  • Place the chicken breasts in the slow cooker and season with salt and pepper.
  • Pour the honey garlic mixture over the chicken, ensuring the chicken is evenly coated.
  • Cover and cook on low for about 4 hours, or until the chicken is tender and easily shredded.
  • Once cooked, remove the chicken from the slow cooker and shred it using tongs or forks.
  • Return the shredded chicken to the slow cooker and stir it to coat with the remaining sauce. Let it sit for 10 minutes to absorb the flavors.
  • Serve the chicken warm over rice or alongside your favorite steamed vegetables. Garnish with sliced green onions and sesame seeds, if desired.

Notes

For extra heat, add a teaspoon of red pepper flakes to the sauce.
This dish can be made with chicken thighs instead of breasts for a richer flavor.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
Consider serving with a side of steamed broccoli or stir-fried vegetables to complete the meal.
