Place the chicken breasts at the bottom of your slow cooker.

Pour the honey garlic mixture over the chicken, ensuring that each piece is coated.
Add in the chopped bell pepper, broccoli florets, sliced carrots, and snap peas. Stir gently to distribute the veggies throughout the sauce.
Season with salt and pepper to taste.
Cover the slow cooker with the lid, set to low heat, and cook for 6 hours.
If you want a thicker sauce, about 30 minutes before serving, mix cornstarch with water in a small bowl until smooth, then add it to the slow cooker. Stir to combine and let it cook for the remaining time.
Once cooked, shred the chicken in the slow cooker with two forks and mix everything together.
Serve hot over rice or quinoa and enjoy!
