Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 lbs.
  • 1 cup honey
  • cup soy sauce
  • 4 cloves garlic Minced.
  • 1 tablespoon grated ginger
  • 1 piece bell pepper Chopped.
  • 2 cups broccoli florets
  • 1 cup carrots Sliced.
  • 1 cup snap peas
  • salt and pepper To taste.
  • 1 tablespoon cornstarch Optional, for thickening sauce.
  • 2 tablespoons water Optional, for thickening sauce.

Instructions
 

  • Place the chicken breasts at the bottom of your slow cooker.
  • In a mixing bowl, combine honey, soy sauce, minced garlic, and grated ginger. Mix until well combined.
  • Pour the honey garlic mixture over the chicken, ensuring that each piece is coated.
  • Add in the chopped bell pepper, broccoli florets, sliced carrots, and snap peas. Stir gently to distribute the veggies throughout the sauce.
  • Season with salt and pepper to taste.
  • Cover the slow cooker with the lid, set to low heat, and cook for 6 hours.
  • If you want a thicker sauce, about 30 minutes before serving, mix cornstarch with water in a small bowl until smooth, then add it to the slow cooker. Stir to combine and let it cook for the remaining time.
  • Once cooked, shred the chicken in the slow cooker with two forks and mix everything together.
  • Serve hot over rice or quinoa and enjoy!
