Ingredients
  

  • 4 breasts boneless, skinless chicken About 1.5 pounds.
  • 1 cup honey
  • ¼ cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced Or 1 teaspoon ground ginger.
  • 1 cup carrots, sliced
  • 1 cup bell peppers, chopped Any color.
  • 1 cup broccoli florets
  • ½ cup onion, sliced
  • to taste salt and pepper
  • 1 tablespoon cornstarch Optional, for thickening sauce.
  • 2 tablespoons water Optional, for thickening sauce.

Instructions
 

  • Start by preparing the chicken breasts. Place them at the bottom of the slow cooker. Season with salt and pepper to taste.
  • In a bowl, mix together the honey, soy sauce, minced garlic, and minced ginger. Pour this mixture over the chicken breasts.
  • Add the sliced carrots, chopped bell peppers, broccoli florets, and sliced onion on top of the chicken.
  • Cover the slow cooker and set it on low for 6 hours or high for 3 hours. Cook until the chicken is tender and fully cooked.
  • If you want a thicker sauce, mix the cornstarch with 2 tablespoons of water in a small bowl until smooth. Stir this mixture into the slow cooker about 30 minutes before serving, and let it cook uncovered for thickening.
  • Once done, shred or slice the chicken and mix the veggies with the sauce before serving.

Notes

You can substitute chicken thighs for breasts if preferred.
Adjust the amount of honey and soy sauce according to your taste preferences.
Feel free to add or replace vegetables based on your preference, such as green beans or zucchini.
Serve over rice or noodles to complete the meal.
