Ingredients
  

  • 1.5 pounds boneless, skinless chicken thighs
  • ½ cup honey
  • ¼ cup soy sauce
  • ¼ cup minced garlic (about 8 cloves)
  • 1 teaspoon ground ginger
  • 1 tablespoon rice vinegar
  • 4 cups mixed vegetables (carrots, bell peppers, broccoli, snap peas)
  • 2 tablespoons cornstarch
  • ¼ cup water
  • Salt and pepper to taste
  • Cooked rice for serving (optional)

Instructions
 

  • In a mixing bowl, combine honey, soy sauce, minced garlic, ground ginger, and rice vinegar. Whisk them together until well blended.
  • Place the chicken thighs in the slow cooker and season with salt and pepper. Pour the honey garlic mixture over the chicken, ensuring they are evenly covered.
  • Add the mixed vegetables on top of the chicken in the slow cooker.
  • Cover and cook on low for 6 hours, or until the chicken is cooked through and tender.
  • Once cooked, remove the chicken from the slow cooker and set it aside.
  • In a small bowl, mix cornstarch with water to create a slurry. Add this mixture to the slow cooker and stir it in well.
  • Turn the slow cooker to high and let the sauce thicken for about 10-15 minutes.
  • Shred the chicken with two forks and return it to the slow cooker, stirring everything together.
  • Serve the honey garlic chicken and veggies over cooked rice if desired. Enjoy your meal!
