- 1.5 lbs boneless, skinless chicken thighs You can substitute chicken breasts for thighs if preferred.
- 1 cup low-sodium chicken broth
- ½ cup honey
- ¼ cup soy sauce
- 3 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 tablespoon sesame oil
- 2 cups mixed vegetables Such as bell peppers, broccoli, and carrots.
- 1 tablespoon cornstarch Optional, for thickening sauce.
