Begin by preparing the ingredients. Slice the carrots, chop the bell peppers and onion, and mince the garlic.
In a mixing bowl, combine the honey, soy sauce, minced garlic, ground ginger, and sesame oil. Stir well until the mixture is thoroughly combined.
Place the chicken thighs in the bottom of the slow cooker. Season with salt and pepper.
Add the sliced carrots, chopped bell peppers, broccoli florets, and onion over the chicken in the slow cooker.
Pour the honey garlic sauce mixture evenly over the chicken and vegetables.
Cover the slow cooker and set it to cook on low for 6 hours or high for 3 hours. If time allows, low is recommended for best flavor and tenderness.
Once cooked, check that the chicken is tender and fully cooked through. If desired, shred the chicken using two forks and stir it back into the sauce and veggies.
