Ingredients
  

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup honey
  • ΒΌ cup soy sauce
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 cup carrots, sliced
  • 1 cup bell peppers, chopped
  • 1 cup broccoli florets
  • 1 medium onion, chopped
  • 2 tablespoon sesame oil
  • Salt and pepper to taste
  • green onions, chopped for garnish (optional)

Instructions
 

  • Begin by preparing the ingredients. Slice the carrots, chop the bell peppers and onion, and mince the garlic.
  • In a mixing bowl, combine the honey, soy sauce, minced garlic, ground ginger, and sesame oil. Stir well until the mixture is thoroughly combined.
  • Place the chicken thighs in the bottom of the slow cooker. Season with salt and pepper.
  • Add the sliced carrots, chopped bell peppers, broccoli florets, and onion over the chicken in the slow cooker.
  • Pour the honey garlic sauce mixture evenly over the chicken and vegetables.
  • Cover the slow cooker and set it to cook on low for 6 hours or high for 3 hours. If time allows, low is recommended for best flavor and tenderness.
  • Once cooked, check that the chicken is tender and fully cooked through. If desired, shred the chicken using two forks and stir it back into the sauce and veggies.
  • Serve the dish warm, garnished with chopped green onions if desired.

For added flavor, consider marinating the chicken in the honey garlic sauce for a few hours before cooking.
