  • 5-6 pound pork roast trimmed of most fat and cut into big chunks
  • 2 tablespoons olive oil for searing pork
  • 2 tablespoons kosher salt for seasoning
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon dried oregano
  • 2 teaspoons ground cumin
  • 1 yellow onion sliced thin
  • 4 cloves garlic minced
  • cup orange juice

  • Trim extra fat from the pork roast and cut into large chunks.
  • Mix kosher salt, black pepper, oregano, and cumin in a small bowl.
  • Rub the spice mixture all over the pork pieces.
  • Heat olive oil in a skillet over medium-high heat and brown pork pieces for 2-3 minutes per side.
  • Place sliced onions and minced garlic at the bottom of the pressure cooker.
  • Add seared pork on top of onions and garlic.
  • Pour orange juice over the pork.
  • Seal the lid and cook on high pressure for 60 minutes.
  • Let it naturally release pressure for 10-15 minutes.
  • Transfer pork to a tray and shred with forks.
  • Optional: Broil shredded pork for 5-7 minutes to crisp the edges before serving.

Notes

Freeze leftovers in portions for quick meals. Crisp in oven or skillet when reheating for fresh flavor.
