Cook bacon until crispy and let it cool. Shred the smoked Gouda and soften the cream cheese.
Lightly spray the pressure cooker pot to prevent sticking. In a bowl, mix cream cheese, sour cream, and mayonnaise until smooth.
Add shredded smoked Gouda, crumbled bacon, chopped green onions, garlic powder, and black pepper. Stir to combine well.
Transfer mixture into the pressure cooker pot and spread it evenly. Lock the lid and set float valve to sealing.
Set pressure cooker to low pressure for 10 minutes to fully melt cheeses without overcooking.
Quick release the pressure and open lid carefully. Gently stir and serve warm with your choice of dippers.

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently to preserve creamy texture.
