- 1 lb potatoes, diced
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- salt to taste
- pepper to taste
- fresh parsley for garnish, optional
Heat the olive oil in a large skillet over medium heat.
Add the sliced smoked sausage to the skillet and sauté for about 5 minutes until browned.
Stir in the chopped onion and bell pepper. Cook for another 3-4 minutes until the vegetables start to soften.
Add the minced garlic and sauté for an additional minute until fragrant.
