Mix ground chicken, spinach, red pepper, onion, parsley, chives (optional), garlic, paprika, salt and pepper in a large bowl. Avoid overmixing.
Form the mixture into 4 to 6 patties depending on size preference.
Heat skillet or grill pan over medium heat and add olive oil.
Cook patties 5 to 7 minutes per side until golden and fully cooked (165°F internally).
While patties cook, prep the bowl base with rice, grains, or salad greens.
Place one cooked patty on each bowl base.
Top with romaine, red cabbage, marinated onions, avocado, pickles, tomatoes, and microgreens (if using).
Drizzle with dressing or Magic Elixir. Serve warm and enjoy!
Notes
Prep toppings and veggies ahead of time for a quicker dinner. Patties can be frozen raw or stored cooked for up to 3 days in the fridge.
