- 1 pound boneless, skinless chicken breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup BBQ sauce (preferably smoky chipotle flavor)
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin

Cut the chicken breasts into bite-sized pieces. Season with salt, pepper, smoked paprika, and ground cumin.
