Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.
Add the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and stir to combine.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheet, leaving space between each cookie.
Bake in the preheated oven for 8 to 10 minutes, or until the edges are lightly golden. The centers should look soft and slightly underbaked.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
Once cooled, sprinkle powdered sugar and festive sprinkles on top for decoration.
