In a large mixing bowl, combine the shredded chicken, black beans, corn, cheese, taco seasoning, green onions, and red bell pepper. Mix well until all ingredients are evenly coated.
Lay an egg roll wrapper on a clean surface, with one corner facing you. Place about 2-3 tablespoons of the filling mixture in the center of the wrapper.
Fold the bottom corner over the filling, then fold in the side corners and roll it tightly away from you to form the egg roll. Seal the edge with a little water if necessary. Repeat for all wrappers.
Heat oil in a frying pan or deep fryer to 350°F (175°C). Carefully place a few egg rolls in the hot oil, being careful not to overcrowd the pan.
