Equipment

  • 1 large mixing bowl
  • 1 frying pan or deep fryer
  • 1 cooking spoon or spatula
  • 1 mixing spatula
  • 1 cutting board
  • 1 paper towels
  • 1 tongs
  • 1 baking tray

Ingredients

  • 2 cups shredded cooked chicken
  • 1 can (15 oz) black beans drained and rinsed
  • 1 cup corn kernels fresh, canned, or frozen
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 tablespoon taco seasoning
  • ¼ cup diced green onions
  • ½ cup diced red bell pepper
  • 12 pieces egg roll wrappers
  • Oil for frying vegetable or canola
  • Salsa or sour cream for dipping

Instructions

  • In a large mixing bowl, combine the shredded chicken, black beans, corn, cheese, taco seasoning, green onions, and red bell pepper. Mix well until all ingredients are evenly coated.
  • Lay an egg roll wrapper on a clean surface, with one corner facing you. Place about 2-3 tablespoons of the filling mixture in the center of the wrapper.
  • Fold the bottom corner over the filling, then fold in the side corners and roll it tightly away from you to form the egg roll. Seal the edge with a little water if necessary. Repeat for all wrappers.
  • Heat oil in a frying pan or deep fryer to 350°F (175°C). Carefully place a few egg rolls in the hot oil, being careful not to overcrowd the pan.
  • Fry the egg rolls for about 3-4 minutes on each side, or until they are golden brown and crispy. Use tongs to remove them from the oil and place them on a paper towel-lined baking tray to drain excess oil.
  • Serve the egg rolls warm with salsa or sour cream for dipping.
  • For a healthier option, you can bake the egg rolls at 400°F (200°C) for 20-25 minutes, flipping halfway through, until golden and crispy. Brush with a little oil before baking for added crispiness.

Notes

You can make the filling ahead of time and store it in the refrigerator for a day before assembling the egg rolls.
