- 1 pound boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1 cup canned artichoke hearts, drained and chopped
- 1 cup cream cheese (8 ounces)
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- to taste salt
- to taste pepper
- 2 tablespoons olive oil
Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, garlic powder, and onion powder on both sides.
Place the seasoned chicken in the skillet and cook for about 6-8 minutes per side, or until the chicken is cooked through and no longer pink in the center. Remove the chicken from the skillet and set aside.
In the same skillet, lower the heat and add the cream cheese. Stir until melted and smooth.
Add the chopped artichoke hearts and spinach to the skillet. Stir until the spinach is wilted and everything is well combined.
Chop the cooked chicken into bite-sized pieces and return it to the skillet. Mix everything together and sprinkle the grated Parmesan cheese on top.
Cover the skillet and let it cook for an additional 3-5 minutes until the cheese is melted and bubbly.
Serve hot, and enjoy your delicious Spinach Artichoke Chicken Skillet!
You can substitute the cream cheese with Greek yogurt for a healthier option.
Feel free to add some crushed red pepper flakes for a spicy kick.
Serve with a side of rice or crusty bread to soak up the creamy sauce.
