Preheat the oven as per the cake mix instructions. Mix cake mix, eggs, oil, and water until smooth.
Pour the batter into a greased 9x13-inch pan and bake for 25–30 minutes until a toothpick comes out clean.
Cool the cake completely before handling.
Crumble the cake into fine crumbs, add in the frosting, and mix until it forms a dough-like consistency.
Roll the mixture into 1-inch balls and place on parchment-lined baking sheet. Freeze for 15–20 minutes.
Melt white chocolate chips or almond bark in microwave using 30-second intervals. Add coconut oil if desired.
Dip the tip of each lollipop stick in chocolate and insert into center of cake balls.
Dip each pop fully into melted chocolate. Let excess drip off and decorate with sprinkles.
Stand the cake pops upright in styrofoam or a holder to set completely.
Once set, cake pops are ready to serve or store per your preference.
Notes
Store at room temperature for 2 days in airtight container. Can refrigerate or freeze if needed—bring to room temp before serving for best texture.
