Equipment

  • 2 9-inch round cake pans
  • 1 mixing bowl
  • 1 electric mixer or whisk
  • 1 rubber spatula
  • 1 measuring cups and spoons
  • 1 offset spatula for frosting
  • 1 cooling rack
  • 1 saucepan
  • 1 parchment paper

Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Added gradually to the batter.
  • 1 cup heavy cream For ganache.
  • 8 ounces dark chocolate (70% cocoa), chopped For ganache.
  • 2 tablespoons unsalted butter For ganache.

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour the two 9-inch round cake pans. Line the bottom with parchment paper for easy removal.
  • In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well until evenly combined.
  • Add the eggs, whole milk, vegetable oil, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for about 2 minutes until well blended.
  • Gradually stir in the boiling water. The batter will be thin but that is normal.
  • Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  • Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, remove from pans and transfer to a cooling rack to cool completely.
  • For the ganache, heat the heavy cream in a saucepan over medium heat until it just begins to simmer. Remove from heat and add the chopped dark chocolate and butter. Stir until smooth and glossy.
  • Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of ganache on top. Place the second layer on top and pour the remaining ganache over the top, allowing it to drip down the sides.
  • Let the ganache set for a bit before slicing the cake. Enjoy!
