  • ¼ cup unsalted butter softened plus extra to butter your pan
  • 1 ¼ cups water
  • 1 ¾ cups chopped pitted Medjool dates about 20
  • 1 teaspoon baking soda
  • 1 cup unbleached all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon kosher salt
  • ½ cup light brown sugar packed
  • 2 large eggs
  • ½ teaspoon vanilla extract

  • Butter an 8-inch square pan really well.
  • Bring 1 ¼ cups water to a boil. Add chopped dates and cook 2 minutes.
  • Remove from heat, stir in baking soda, and let cool 10 minutes.
  • Mix flour, baking powder, and salt in a bowl.
  • Cream butter and brown sugar until fluffy. Beat in eggs one at a time. Stir in vanilla.
  • Fold dry mixture into wet ingredients. Stir in cooled date mixture.
  • Pour batter into prepared pan and smooth the top.
  • Bake at 350°F for 30-35 minutes. Cool in pan 10 minutes before serving.

Notes

Serve warm with caramel sauce and whipped cream. Store at room temperature for 2 days, or refrigerate up to 5 days. Freeze slices for longer storage.
