Ingredients
  

  • 1.5 lbs chicken thighs, boneless and skinless
  • cup honey
  • ¼ cup soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • to taste salt
  • to taste pepper
  • optional garnish: sesame seeds
  • optional garnish: chopped green onions

Instructions
 

  • Cut the chicken thighs into bite-sized pieces and season them lightly with salt and pepper.
  • In a large mixing bowl, whisk together honey, soy sauce, minced garlic, minced ginger, rice vinegar, and cornstarch until well combined.
  • Add the chicken pieces to the bowl and toss them in the marinade, ensuring all pieces are well-coated. Allow it to marinate for at least 10 minutes (or up to 1 hour in the refrigerator for deeper flavor).
  • Heat vegetable oil in a skillet over medium-high heat. Once hot, add the marinated chicken pieces to the skillet.
  • Cook the chicken for about 5-7 minutes, stirring occasionally until golden brown.
  • Pour any remaining marinade into the skillet and cook for an additional 5-10 minutes, or until the sauce thickens and becomes sticky, ensuring the chicken is cooked through (internal temperature should reach 165°F or 75°C).
  • Remove the skillet from heat. If desired, sprinkle with sesame seeds and chopped green onions for garnish.
  • Serve hot over rice or with steamed vegetables.

Notes

For added spice, consider incorporating red pepper flakes or sriracha into the marinade.
Ensure the chicken is well-cooked and the sauce is sticky before removing from the heat for the best results.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
