Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 8 medium strawberries hulled and halved
  • 2 large bananas sliced
  • to taste maple syrup for serving

Instructions
 

  • In a mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk together until well mixed.
  • In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and stir gently just until combined. Be careful not to overmix; some lumps are okay.
  • Heat your non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a bit of butter.
  • Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes on the other side until golden brown. Repeat with the remaining batter.
  • Once pancakes are cooked, allow them to cool slightly, then start assembling the skewers.
  • On each skewer, alternate threading pancakes, strawberry halves, and banana slices until you fill the skewer. Aim for 2 pancakes, 2 strawberries, and 2 banana slices per skewer.
  • Serve warm, drizzled with maple syrup if desired.

Notes

You can customize the skewers with other fruits like blueberries or peaches.
For added flavor, consider adding a pinch of cinnamon to the pancake batter.
These skewers can be prepared ahead of time; just reheat the pancakes before assembling.
