In a mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk together until well mixed.
In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir gently just until combined. Be careful not to overmix; some lumps are okay.
Heat your non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a bit of butter.
Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes on the other side until golden brown. Repeat with the remaining batter.
Once pancakes are cooked, allow them to cool slightly, then start assembling the skewers.
On each skewer, alternate threading pancakes, strawberry halves, and banana slices until you fill the skewer. Aim for 2 pancakes, 2 strawberries, and 2 banana slices per skewer.
Serve warm, drizzled with maple syrup if desired.
