Ingredients
  

  • 8 slices thick bread (such as brioche or challah)
  • 4 large eggs
  • 1 cup milk
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • 1 cup strawberries, hulled and sliced
  • ½ cup mascarpone cheese
  • 1 tablespoon powdered sugar
  • 1 tablespoon lemon juice
  • to taste butter or oil for cooking

Instructions
 

  • In a mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, and cinnamon until well combined.
  • Pour the egg mixture into a shallow dish.
  • Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side.
  • Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil to coat the surface.
  • Place the soaked bread slices onto the skillet and cook for about 3-4 minutes on each side, until golden brown.
  • While the French toast is cooking, prepare the strawberry cream by mixing together the mascarpone cheese, powdered sugar, and lemon juice until smooth.
  • Once the French toast is cooked, plate each slice and generously top with sliced strawberries and a dollop of the mascarpone cream.
  • Optionally, sprinkle with extra powdered sugar and serve with maple syrup.

Notes

For an extra flavor boost, consider adding a splash of orange zest to the mascarpone mixture.
This recipe can be customized with other fruits, such as blueberries or bananas.
For a healthier option, whole grain bread can be substituted for the thick bread.
