Ingredients
  

  • 1 pre-made pie crust 9-inch
  • 2 cups fresh strawberries hulled and halved
  • ¾ cup granulated sugar
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1 tablespoon butter

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Place the pre-made pie crust in a 9-inch pie pan, pressing it into the bottom and sides. Poke holes in the bottom with a fork to prevent bubbling.
  • In a mixing bowl, combine the sugar, cornstarch, and salt. Stir until well mixed.
  • In a saucepan, combine the water, sugar mixture, and lemon juice. Cook over medium heat, whisking continually until the mixture thickens and becomes clear, about 5-7 minutes.
  • Remove the saucepan from heat and stir in the butter until melted. Allow the mixture to cool slightly.
  • Gently fold in the halved strawberries into the cooled mixture, ensuring they are well coated.
  • Pour the strawberry filling into the prepared pie crust, spreading it evenly.
  • Bake the pie in the preheated oven for 10 minutes until the crust is lightly golden.
  • Remove from oven and allow to cool at room temperature before slicing and serving.

Notes

For best results, use fresh strawberries when they are in season for maximum flavor.
This pie can be served with whipped cream or vanilla ice cream for added indulgence.
