Ingredients
  

  • 1 pound boneless, skinless chicken breast cut into bite-sized pieces
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup canned pineapple chunks drained (reserve the juice)
  • 1 tablespoon vegetable oil
  • 1 medium onion chopped
  • 1 medium red bell pepper diced
  • 2 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Chopped green onions and cilantro for garnish (optional)

Instructions
 

  • Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chopped onion and red bell pepper, sautéing for about 3-4 minutes or until softened.
  • Add the minced garlic and cook for another minute until fragrant.
  • Toss in the chicken pieces and season with salt, pepper, and ground ginger. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  • In a medium saucepan, combine the rice and chicken broth. Bring it to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes until the rice is tender and has absorbed the liquid.
  • Stir in the soy sauce, honey, pineapple chunks, and reserved pineapple juice into the chicken mixture. Cook for an additional 5 minutes, allowing the flavors to meld together.
  • Once the rice is done, fluff it with a fork. Serve the chicken mixture over the rice.
  • Garnish with chopped green onions and cilantro if desired. Serve hot.

Notes

For added crunch, consider adding crushed cashews or bell pepper slices at the end of cooking.
If you prefer spicy, add red pepper flakes or sriracha to taste for a kick.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop before serving.
