Toss chicken with corn starch, salt, black pepper, and red pepper in a medium bowl until evenly coated.
Heat olive oil and butter in pressure cooker on sauté setting. Add chicken and brown for about 6–8 minutes until cooked through.
Add chopped red and orange bell peppers and sliced jalapeño. Cook for 4–5 minutes until softened.
Add minced garlic and ginger and stir until fragrant.
Pour in sweet chili sauce and honey. Stir to coat all ingredients evenly.
Lock lid and cook at high pressure for 5 minutes. Use quick release to release steam.
Open lid carefully, stir, and serve hot over rice or noodles. Garnish with lime slices and chopped green onion.
Notes
This makes great leftovers and keeps well refrigerated up to 4 days. Can be frozen up to 2 months. Reheat with splash of water or broth.
