  • 0.75-1 lb chicken breasts cubed
  • 1 tablespoon corn starch
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper adjust to taste
  • 1 small red bell pepper chopped
  • 1 small orange bell pepper chopped
  • 1 jalapeño sliced
  • 3 cloves garlic minced
  • 1 inch ginger minced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • ¾ cup sweet chili sauce more as needed
  • 1-2 tablespoon honey
  • 1 lime sliced for serving
  • 3 tablespoon green onions chopped

  • Toss chicken with corn starch, salt, black pepper, and red pepper in a medium bowl until evenly coated.
  • Heat olive oil and butter in pressure cooker on sauté setting. Add chicken and brown for about 6–8 minutes until cooked through.
  • Add chopped red and orange bell peppers and sliced jalapeño. Cook for 4–5 minutes until softened.
  • Add minced garlic and ginger and stir until fragrant.
  • Pour in sweet chili sauce and honey. Stir to coat all ingredients evenly.
  • Lock lid and cook at high pressure for 5 minutes. Use quick release to release steam.
  • Open lid carefully, stir, and serve hot over rice or noodles. Garnish with lime slices and chopped green onion.

Notes

This makes great leftovers and keeps well refrigerated up to 4 days. Can be frozen up to 2 months. Reheat with splash of water or broth.
