Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
Add the curry powder, cumin, turmeric, salt, and black pepper, stirring for another minute to toast the spices.
Add the cubed sweet potatoes, diced tomatoes, coconut milk, and drained chickpeas to the pot. Stir until well combined.
Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the sweet potatoes are tender.
Taste and adjust the seasoning if necessary. Remove from heat.
Serve hot, garnished with fresh cilantro if desired. Enjoy it on its own or with rice, quinoa, or naan bread.
