Ingredients
  

  • 8 oz elbow macaroni (dry)
  • 1 lb ground beef or turkey Can substitute with plant-based meat alternatives for a vegetarian option.
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 packet taco seasoning About 1 oz.
  • 1 can diced tomatoes with green chilies 15 oz, undrained.
  • 1 cup milk
  • 1 cup beef broth or chicken broth
  • 1 tablespoon olive oil
  • 1 cup black beans (canned) Drained and rinsed.
  • ½ cup corn Canned or frozen.
  • to taste salt and pepper
  • optional toppings Sliced jalapeños, sour cream, chopped cilantro, diced avocado, crushed tortilla chips.

Instructions
 

  • Cook the elbow macaroni according to package instructions in a large pot. Drain and set aside.
  • In the same pot, heat the olive oil over medium heat. Add the ground beef or turkey and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess fat.
  • Stir in the taco seasoning, diced tomatoes, milk, and beef broth into the cooked meat. Bring the mixture to a simmer.
  • Add the cooked macaroni, black beans, corn, and half of the shredded cheese to the pot. Stir until everything is well combined, and cheese is melted.
  • Season with salt and pepper to taste. If desired, transfer the mixture to a baking dish, top with the remaining cheese, and bake in a preheated oven at 350°F (175°C) for 15-20 minutes until bubbly and golden.
  • Serve hot with optional toppings like jalapeños, sour cream, and crushed tortilla chips.

Notes

For a spicier version, consider adding additional chili powder or diced fresh jalapeños.
You can substitute ground beef or turkey with plant-based meat alternatives for a vegetarian option.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or in the microwave.
