  • 12 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup black olives, sliced
  • ½ cup red bell pepper, diced
  • ¼ cup red onion, finely chopped
  • cup fresh basil, chopped
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to the package instructions, usually around 5-7 minutes, until al dente. Drain and rinse under cold water to stop the cooking process.
