Ingredients
  

  • 1 pound boneless, skinless chicken breasts
  • 2 cups mixed salad greens
  • 1 cup shredded carrots
  • 1 red bell pepper, sliced
  • 1 cup cucumber, thinly sliced
  • ¼ cup chopped cilantro
  • ¼ cup chopped peanuts For added crunch.

  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • water To thin the dressing, as needed.

Instructions
 

  • Heat a grill pan or skillet over medium heat. Season the chicken breasts with salt and pepper. Cook for about 6-7 minutes on each side until fully cooked through and no longer pink in the center. Allow the chicken to rest for a few minutes before slicing it into thin strips.
  • While the chicken is cooking, in a large mixing bowl, combine the peanut butter, soy sauce, lime juice, honey, sesame oil, minced garlic, and a splash of water. Whisk until smooth and creamy. Adjust the consistency by adding more water if needed.
  • In a large mixing bowl, combine the salad greens, shredded carrots, sliced bell pepper, cucumber, and chopped cilantro. Toss to mix the vegetables together.
  • Add the sliced chicken to the salad and drizzle the peanut dressing over the top. Toss gently to combine everything evenly, ensuring that the dressing coats all the ingredients.
  • Serve the Thai Peanut Chicken Salad in individual bowls or plates, and top with chopped peanuts for added crunch.
